Ingredients and spices that need to be Prepare to make Gujarati kadhi khichdi:
- 30-40 Grams besan /gramflour
- 2 Glasses buttermilk or 1 cup curd (preferably sour)
- 1 teaspoon turmeric powder
- 1 Teaspoon red chilli powder
- As per taste salt
- 2 Teaspoon ginger garlic paste
- 1-2 finely chopped Green chillies
- 1 Dried red chilli
- 1 Bayleaf
- 1-2 Small peices cinnamon
- 1-2 Cloves
- 2-4 whole black pepper
- 1 Teaspoon fenugreek seeds
- Pinch aseofotida
- 6-8 Curry leaves
- 2 Strands fresh coriander leaves
- 2 tablespoon grated jaggery
- 3-4 Tablespoon oil
- 1 Teaspoon cumin seeds
- For khichdi-
- 1/2 cup green split moong daal
- 3/4 Cup khichdi rice
- 2 Teaspoons ghee / oil
- As per taste salt
- 1/2 Teaspoon turmeric (optional)
Instructions to make to make Gujarati kadhi khichdi
- Firstly wash and soak he rice and dal together fo 20 minutes.

- Take A bowl. Put gramflour and slowly slowly pour buttermilk and keep stirring continuously to avoid lumps. (u can whisk) Once it is mixed well add turmeric, red chilli and salt. Mix well and keep aside.



- Take A deep vessel, heat oil in it. Put bay leaf, cumin seeds, cloves, black pepper, fenugreek seeds, dry red chilli, and pinch of asafoetida one by one and saute on low flame. Then add ginger-garlic paste, green chillies and curry leaves mix well and pour the besan and curd mix slowly on low flame and keep stirring continuously so that no lumps are formed.



- Keep stirring on low and then add 1-2 glasses of water mix well and bring it to A soup type consistency. Let it come to A boil for 2-3 minutes. Meanwhile, take A pressure cooker put the soaked khichdi after removing excess water add salt, ghee/oil 1-2 glasses of water, mix well and pressure cook up to 4 whistles on low flame.


- Garnish with fresh coriander and serve hot with khichdi. (You may or may not add turmeric powder to khichdi while boiling/cooking)
