  5. 6 potatoes cut into 4 (put salt and zarda rang and mix it)
  6. 1 tbs ginger garlic paste
  7. 2 tbs chilli paste
  8. 1 tbs black pepper
  9. 1/2 tbs turmeric powder
  10. 1 tbs coriander powder
  11. 1 tbs cumin powder
  12. 1.5 tbs salt or to taste
  13. 1 cup yogurt (whipped)
  14. 1 tbs kewra water
  15. For rice
  16. 1.5 kg rice
  17. Whole Dry condiments (black pepper, cardamom, bay leaf, cumin, cloves, cinnamon)
  18. 2 tbs salt
  19. 1 tbs vinegar
  20. For layering and garnishing
  21. 1.5 tomato thin slices
  22. Golden onion
  23. Chopped coriander and mint
  24. 1 lemon juice
  25. Green chillies
  26. Red button chilli
  27. 2 twigs curry leaf
  28. Oil

Steps to make to make White Mutton Biryani

  1. Firstly, make a chilli paste. Just to put in mill and grind it. Keep aside.
  2. Wash and clean mutton meat. In the mean while, put the pot on stove and make it hot. Put all dry condiments. When it starts splattering add thin slices of onion and start frying it.
  3. Fry until it turns light pink. Then only add meat in it with ginger garlic paste.
  4. Fry for few mins or until the meat the colour turns into white. Make the flame slow. Then add green chilli paste.
  5. Put all other spices: turmeric powder, black pepper powder, coriander powder, cumin powder. Mix it well and fry for few mins. Then pour glass of water and cover it. Put the flame on medium and cook until meat turns soft and tender.
  6. Once meat looks soft, add a cup of whipped yogurt and potato together. Cook more half hour on medium flame.
  7. Mean while, take a big pot for rice. Fill it up with water and put on stove. Put all whole Dry condiments (black pepper, cardamom, bay leaf, cumin, cloves, cinnamon) with mint leaves. Once the water starts boiling, add soaked rice, salt and a tablespoon of vinegar. In 10 to 15 mins, rice gets done. Strain it.
  8. Take a same big pot, pour oil and add some red button chilli and curry leaves. Fry for a while then start layering.
  9. Start with tomatoes, then boiled rice and then meat with potatoes.
  10. Add again tomatoes, fried onion and chopped coriander. Pour kewra.
  11. Add some whole green chillies. Again rice layering and meat with gravy.
  12. Put chopped coriander and fried onions and then final layer of rice.
  13. Final layer with chopped coriander, fry onions and lemon juice with kewra water. Cover it properly and pit on Tawa or flat pan for 30 mins steam. Do not open it. After 30 min open it and start breaking a biryani from one side of the pot and mixing it gently. 🤩 it’s so tempting and aroma is spreading all over and my family asking me Khanaaaaa…😄
